Title: The Rolls We Like

Yield: 24 Rolls
2 | tb | Dry yeast |
1 1/2 | c | Buttermilk; scalded * |
1/2 | c | Melted shortening or margar- ine (have used 1/4 C. OK) |
1 | ts | Salt |
1/4 | c | Sugar |
1/2 | ts | Soda |
4 1/2 | c | Flour |
* To scald put the buttermilk in a plastic or glass measuring pitcher and heat in microwave for about 1-1/2 to 2 minutes.)
Put scalded buttermilk in large mixing bow. Add the shortening, sugar, and salt. Mix well with a spoon. When the mixture is lukewarm, sprinkle the yeast over the mixture and stir well until it is smooth. Then add flour and baking soda that has been mixed together. Mix well and let stand 10 minutes. Roll out and cut with a biscuit cutter. Place in an oiled pan and let rise until double in bulk. It will take about 30 minutes to rise. Bake in a 425! F oven for about 10 to 12 minutes.
Husband's comment: When you taste her bread with a little butter and honey, you think you have gone to Heaven."
