3/4 | c | Yellow cornmeal |
1 1/4 | c | Sifted all purpose flour |
1 | tb | Salt |
2 | tb | Shortening |
1 | c | Boiling water |
In a small mixing bowl mix together cornmeal, flour and salt. Stir in shortening and boiling water, mix wwell. Shape to form 12 balls. Flatten each ball between 2 sheets waxed paper to make a 5 inch circle. Bake on a hot ungreased griddle until cooked. Place each one in hot oil about 1 inch deep and fold over with tongs. fry until crisp.
