1 | lb | Turkey breast, skinned, boned, and sliced 1/2" thick |
3 | tb | Flour |
2 | ts | Olive oil |
1/2 | c | Lemon juice |
1 | tb | Capers, drained |
1 | Lemon, thinly sliced |
Cut turkey into serving-size pieces. Place between sheets of plastic wrap. Pound to a thickness of about 1/4". Dust turkey with flour. Heat oil in a nonstick frying pan over medium-high heat. Add turkey and cook, turning once, until golden brown on both sides, abut 4 minutes. Transfer turkey to a platter and keep warm. Add lemon juice and capers to pan. Bring to a boil and cook, stirring until thickened, about 2 minutes. Pour sauce over turkey. Garnish with lemon slices.
