1 | | Orange or Apple juice |
1 | | Stick (2inch) cinnamon |
3 | | Whole cloves |
1/2 | c | Whole wheat couscous |
1 | ts | Liquid honey or to taste |
2 | tb | Toasted chopped pecans(opt) |
Drain juice from oranges into glass measure. Add orange or apple juice to
mandarin juice if nesessary, so that it measures 3/4 cup. In a small sauce
pan, combine juice, cinnamon stick and cloves; bring to boil over high
heat. Stir in couscous. Reduce heat to low; simmer for 2 minutes, stirring,
until liquid is absorbed. Remove saucepan from heat; let stand, for 5 mins.
Gently stir in mandarin orange segments and honey. Serve hot, sprinkled
