1 | c | Graham cracker crumbs |
2 | tb | Granulated sugar |
3 | tb | Butter, melted |
FILLING | ||
1 1/2 | lb | Cream cheese |
1 | c | Granulated sugar |
1/2 | c | Whipping cream |
3 | tb | All-purpose flour |
3 | Eggs | |
2 | tb | Rum (or 2 T orange juice |
And 1 t rum extract) | ||
1/2 | ts | Nutmeg |

Combine crumbs, sugar and butter; press onto bottom of 9-inch springform pan. Bake in 325 F (160 C) oven for 10 minutes. Let cool on rack.
Filling: Beat together cheese, sugar, cream and flour until smooth; beat in eggs, rum and nutmeg. Pour into crust and bake in 425 F (220 C) oven for 10 minutes. Reduce heat and bake in 250 F (120 C) oven for 45 minutes or until centre is barely firm to the touch. Loosen cake from rim; let cool before removing sides.
