Title: Mama's Roll Cake

5 | Eggs | |
2/3 | c | Sugar |
1/4 | ts | Salt |
1/2 | c | Sifted cake flour |
3 | tb | Melted butter |
1 | ts | Vanilla |
1 | c | Jam, jelly or other filling |
Combine eggs and sugar and beat until blended. Place over hot water and heat until mixture is slightly hot (140ø). Remove from heat and beat until mixture holds a soft peak. Combine salt and flour and fold into egg mixture. Fold in butter, a tablespoon at a time. Blend in vanilla. Pour into a large (10X15 inch) pan lined with paper. Bake in moderate oven (350øF) 15 to 20 minutes. Turn quickly onto a towel sprinkled with confectioners' sugar, remove paper and trim off crusts. Spread quickly with slightly whipped jam or jelly, or other filling, roll and cool; or roll cake while hot and when cold, unroll and spread with filling and roll. Just before serving sprinkle cake with confectioners' sugar.
