Title: Divinity Frosting

1 1/2 | c | Sugar |
1/2 | ts | Cream of tartar |
1/2 | c | Water |
3 | Egg white | |
1/2 | ts | Vanilla |
Combine first 3 ingredients in a heavy saucepan. Cook over medium heat, stirring constantly, until mixture is clear. Cook mixture without stirring until candy thermometer registers 240-F. Beat whites of 3 eggs (at room temperature) until soft peaks form; continue to beat, slowly adding syrup mixture. Add vanilla; continue beating until stiff peaks form and frosting is thick enough to spread.
