Title: Sunbeam Coffee Cake

1 | pk | Yellow cake mix |
1 | tb | Grated orange rind |
TOPPING | ||
1/2 | c | Brown sugar, packed |
4 | tb | Fine graham cracker crumbs |
1 | tb | Grated orange peel |
1/2 | c | Coarsely chopped nuts |
2 | tb | Melted butter or margarine |
1 1/2 | ts | Cinnamon |
Cover frypan, close bent. Preheat to 280 degrees F.
Combine topping ingredients in small electric mixer bowl. Beat on low speed until blended. Nuts may be sprinkled on top.
Prepare 1 package yellow cake mix as directed on label, adding 1 tablespoon grated orange rind.
Grease frypan using a pastry brush. Sprinkle lightly with four, brushing the flour and shortening mixture over surface.
Pour batter into prepared frypan. Bake covered about 30 minutes, or until dry and done on top. Open vent last 5 minutes.
When baked, uncover, quickly sprinkle topping evenly over cake. Cover, turn dial to off. Let stand 10 minutes longer before cutting. This sets the topping. Uncover, cut into squares and serve warm directly from frypan.
NOTE: The two egg cake recipe may be used instead of the package of mix.
