Title: Sunbeam Cheese Cake

CRUST | ||
1 1/3 | c | Graham cracker crumbs |
1/2 | c | Melted butter or margarine |
1/3 | c | Granulated sugar |
1/2 | ts | Cinnamon |
FILLING | ||
3 | Eggs | |
1/3 | c | Sugar |
1 1/2 | ts | Vanilla |
2 | ts | Grated lemon rind |
19 | oz | Cream cheese; room temp |
TOPPING | ||
1 | c | Commercial sour cream (to 2 cups) |
2 | tb | Sugar |
1 | ts | Vanilla |
CRUST: Combine graham cracker crumbs, melted butter or margarine, sugar and cinnamon in mixing bowl. Blend well. Pour into cold frypan and press mixture firmly to cover bottom and form a small rim at sides.
FILLING: Combine eggs, sugar, vanilla and lemon rind in small mixer bowl. Beat on medium speed for 1 minute. Add cream cheese, a small about at a time while beating each time until blended. After all has been added, beat 1/2 minute longer. Pour into crust, spreading evenly. Cover, close vent. Bake at 260 degrees F until set, about 20 minutes.
TOPPING: Combine ingredients, beat with a fork until blended and spread over cheese mixture. Cover, bake 5 minutes longer. Cool. Cut into desired servings.
