1 | qt | Chopped cabbage (1 small) |
3 | c | Chopped cauliflower (1 md) |
2 | c | Chopped onion |
2 | c | Chopped green tomatoes |
2 | c | Chopped green peppers (4 md) |
1 | c | Chopped sweet red and yellow |
Bell peppers | ||
3 | tb | Salt |
LIQUID: | ||
2 1/2 | c | White vinegar |
1 1/2 | c | Sugar, or more to taste |
2 | ts | Dry mustard |
1 | ts | Tumeric |
1/2 | ts | Ground ginger |
2 | ts | Celery seed |
1 | ts | Mustard seed |
Combine all of the chopped ingredients, sprinkle with the 3 T. of salt, mix lightly, let stand 4-6 hours in a cool place. Drain well.
Combine the ingredients for the liquid, simmer for 10 minutes.
Add the vegetables to the hot liquid, simmer 20-25 minutes. Bring to a boil. Seal with hot, sterilized, jars and lids, leaving 1/4" headspace.
Note: you can use green or ripe tomatoes.
