Title: Fresh Berry Coulis

1 | lb | Fresh or frozen raspberries, - strawberries, peaches, - plum |
1 | oz | Kirschwasser (cherry liqueur |
2/3 | c | Honey |
3/4 | c | White wine, dry or sweet |
In blender, puree fruit, Kirschwasser and 2/3 of honey and wine until smooth. Add more honey to attain desired sweetness and more wine for desired consistency. Strain coulis through fine sieve to remove any seeds. Coulis may be used immediately, refrigerated 5 to 8 days or frozen for 2 or 3 months. Makes 8 to 12 servings.
NOTE: Use on angel food cake, granola, cereal, ice cream and other foods. For nonalcoholic version substitute fruit juices or nonalcoholic wine for wine, and cherry syrup for Kirschwasser. If you don't have Kirschwasser, use brandy.
