1/4lbMargarine, softened
3/4cLight brown sugar, packed
1 Egg
2tbVanilla extract
1cFlour
1/2tsBaking soda
1/4tsBaking powder
1/2cGrated coconut
1/2cGranola
3/4cWalnuts, coarsely chopped
1 3/4cSemisweet chocolate chips

In large bowl, cream margarine and brown sugar with electric mixer until smooth. Add the egg and vanilla and beat well. Let the mixture sit 5 minutes, then beat at high speed for 3 minutes or until very light brown and creamy. Combine the flour, baking soda, and baking powder in a small bowl, breaking up any lumps. Stir into creamed mixture, mixing well. Stir in the coconut, granola, walnuts, and the chocolate chips. Drop the batter by tablespoonfuls onto a lightly greased cookie sheet about 1 1/2" apart. Bake in a 350 F oven until lightly browned, about 10 to 15 minutes. With a spatula, immediately remove cookies from cookie sheet and cool on a wire rack. Store in an airtight container.
