1/4 | lb | Margarine, softened |
3/4 | c | Light brown sugar, packed |
1 | | Egg |
2 | tb | Vanilla extract |
1 | c | Flour |
1/2 | ts | Baking soda |
1/4 | ts | Baking powder |
1/2 | c | Grated coconut |
1/2 | c | Granola |
3/4 | c | Walnuts, coarsely chopped |
1 3/4 | c | Semisweet chocolate chips |
In large bowl, cream margarine and brown sugar with electric mixer until
smooth. Add the egg and vanilla and beat well. Let the mixture sit 5
minutes, then beat at high speed for 3 minutes or until very light brown
and creamy. Combine the flour, baking soda, and baking powder in a small
bowl, breaking up any lumps. Stir into creamed mixture, mixing well. Stir
in the coconut, granola, walnuts, and the chocolate chips. Drop the batter
by tablespoonfuls onto a lightly greased cookie sheet about 1 1/2" apart.
Bake in a 350 F oven until lightly browned, about 10 to 15 minutes. With a
spatula, immediately remove cookies from cookie sheet and cool on a wire
rack. Store in an airtight container.
