Title: Sweet Potatoes w/ Orange

2 | lb | Sweet potatoes |
1 | lg | Oranges |
2 | tb | Butter |
2 | tb | Oil |
1/2 | ts | Ground cinnamon |
1 | tb | Black peppercorns |
2 | tb | Fresh parsley; chopped |
Salt to taste |
Boil sweet potatoes until almost tender (about 20 minutes), then drain, peel and cut into large chunks. Peel and segment one orange, and squeeze the juice from the other. Crush the peppercorns. Saute the sweet potato chunks in the oil and butter until golden and beginning to flake. Remove the pan from the heat; stir in the orange segments, orange juice, cinnamon, pepper, parsley and salt. Mix well and serve hot.
