Title: Miller's Calzone

PASTRY | ||
3 | c | All-purpose flour |
1 | c | Whole wheat flour |
1 1/4 | ts | Salt |
1/3 | c | Margarine |
1/3 | c | Shortening |
Buttermilk, as needed | ||
FILLING | ||
1 1/2 | c | Ricotta cheese |
1/4 | c | Parmesan cheese |
Salt & Pepper to taste | ||
1/4 | ts | Thyme |
1 | Egg, beaten | |
1 | c | Ham, diced |
PASTRY: In mixing bowl, measure flour and salt together. Quarter margarine and shortening into cubes and add to bowl. Work the dough by hand, adding buttermilk a tablespoon at a time until kneaded to a pliable dough consistency. Cover and refrigerate.
FILLING: In mixing bowl, combine all ingredients. Take dough and divide it into 6 equal balls. On floured surface, roll out dough to 1/4" thickness. Place 1/6 of the filling mixture on dough and fold dough in half, forming a half-moon shape. Pinch edges together and prick dough with a fork. Repeat until all are filled. Placed on greased baking sheet and bake in a 350-degree oven approximately 20 minutes.
