Title: Jo Parodi's Swedish Meat Loaf

Yield: 4 Servings
1 | c | Soup, Cream of Mushroom |
1 1/2 | lb | Beef, ground |
1 | Egg; slightly beaten | |
1/2 | c | Bread crumbs, fine dry |
1/4 | ts | Nutmeg, ground |
1/2 | c | Cream, Sour |
Mix thoroughly beef, egg, bread crumbs, nutmeg and 1/3 cup of soup. Shape firmly into a loaf shape; place in shallow baking pan. Bake at 350 degrees for 1 hour. Blend remaining soup and sour cream. Heat; stir now and then. Serve this sauce over the meat loaf; sprinkle with additional nutmeg. Garnish with cucumber slices.
