Title: Deadly Habanero Sauce

2 | c | Habanero peppers -- seeded |
1 | And chopped | |
1 | c | Cider vinegar |
1 | tb | Salt |
1 | ts | Ground allspice |
1 | ts | Thyme |
1 | ds | Pepper |
1/4 | ts | Cinnamon |
1/4 | ts | Nutmeg |
1 | ts | Sugar |
1 | tb | Lime juice |
Place peppers, salt, and vinegar in a nonreactive saucepan, cover, and heat over low heat until peppers are limp, about 10-15 minutes. (You will want windows open, as the steam will irritate your eyes and throat.)
Add in remaining ingredients, mix well, and re-cover saucepan. Let sit until cooled, about 20-30 minutes. Carefully pour mixture into a blender and puree until smooth. Store in a glass container in the refrigerator.
