Title: Statesborough Meatloaf

1 1/2 | tb | Vegetable oil |
1 | md | Onion -- chopped |
3 | md | Garlic cloves -- crushed |
2 | lb | Lean ground beef |
2 | ts | Salt |
1 | ts | Black pepper |
2 | Eggs -- beaten | |
3/4 | c | V-8 juice |
1/2 | c | Fresh parsley -- chopped |
1 | tb | Bottled Caribbean-style |

Damnation Hot Sauce | ||
1 | c | Fresh breadcrumbs |
Preheat oven to 350~. Heat the oil in a skillet and saute onion until translucent, about 5 mins. Add garlic and saute one minute. Transfer the onion and garlic into a lg. mixing bowl and add the beef, salt, black pepper, eggs, juice, parsley, and sauce. Mix well. Oil a 12"x8"x2" pan and pour in mixture, molding it into a loaf. Sprinkle the top w/breadcrumbs and bake for on hour.
