Title: Statesborough Meatloaf

Yield: 6 Servings

1 1/2tbVegetable oil
1mdOnion -- chopped
3mdGarlic cloves -- crushed
2lbLean ground beef
2tsSalt
1tsBlack pepper
2 Eggs -- beaten
3/4cV-8 juice
1/2cFresh parsley -- chopped
1tbBottled Caribbean-style
  Sauce such as Hellfire &
  Damnation Hot Sauce
1cFresh breadcrumbs

Preheat oven to 350~. Heat the oil in a skillet and saute onion until translucent, about 5 mins. Add garlic and saute one minute. Transfer the onion and garlic into a lg. mixing bowl and add the beef, salt, black pepper, eggs, juice, parsley, and sauce. Mix well. Oil a 12"x8"x2" pan and pour in mixture, molding it into a loaf. Sprinkle the top w/breadcrumbs and bake for on hour.
