Title: Swiss Meatloaf

1 | Large egg | |
1/2 | c | Evaporated milk |
1 | ts | Salt |
1/2 | ts | Pepper |
1 1/2 | lb | Lean ground beef |
1 | c | Ritz cracker crumbs |
3/4 | c | Grated Swiss cheese, divided |
1/4 | c | Finely chopped onion |
3 | Strips bacon, cut into | |
1-inch pieces |
Beat egg in a large mixing bowl. Add evaporated milk, salt and pepper; mix well. Add ground beef, cracker crumbs, 1/2 cup cheese and onion; blend well. Form mixture into a loaf. Place loaf in a 2-quart baking dish and arrange bacon pieces on top.
Bake at 350F. for 40 minutes. Remove from oven and sprinkle remaining 1/4 cup cheese on top of meat loaf. Return to oven and bake for 10 more minutes.
The addition of Swiss cheese gives this meat loaf a distinctive flavor. Patricia Rogers Metamora, Indiana
