4 | sm | Pitas, or 2 Large Pitas |
1 | tb | Olive oil |
2 | | Tomatoes, sliced |
8 | lg | Black olives, sliced |
2 | tb | Fresh basil, chopped |
1 | md | Onion, sliced thin |
4 | oz | Feta cheese with basil |
| | Parmesan cheese, grated |
Lightly brush the surface of the pita with olive oil. Place sliced
tomatoes, basil, feta, onion rings and olives on pitas, and place on a
cookie sheet. Bake at 425-degrees until cheese begins to melt and pizza
toppings are just beginning to brown, about 10-12 minutes. Let cool for 2
minutes, then slice and serve immediately. Top with a little grated
parmesan if so desired.
