Title: Spicy Lentil Potato Stew

Yield: 4 Servings
1/2 | c | Lentils (uncooked) |
1 | c | Chopped carrots |
1/4 | c | Chopped celery leaves |
3 | Cloves chopped garlic | |
1/2 | ts | Dried basil |
2 | c | Tomato juice |
2 | md | Potatoes (don't peel) (chop into 1/2" cubes) |
1/2 | c | Chopped celery |
1 | tb | Chili powder (or less) |
1/2 | ts | Dried oregano |
3/4 | c | Water |
Throw it all in a large sauce pan, mix it up, and bring it to a boil. Cover, reduce heat and simmer til veggies are tender (about 45 minutes). Hope you like it, Michele
