Title: Pinto Bean Tacos

4 | Taco shells | |
1 | 15 oz can | |
1 | Drained | |
1/2 | c | Tomato sauce |
1/2 | c | Bell peppers -- chopped |
1/2 | c | Onion -- chopped |
1/2 | pk | Taco seasoning mix |
1 | ts | Chili powder |
1/4 | ts | Oregano |
1/4 | ts | Cumin |
1/2 | c | Cheddar cheese -- shredded |
1 | Pinto beans -- rinsed/ |
Heat taco shells according to package directions. Meanwhile, in a saucepan combine pinto beans, tomato sauce, peppers, onions, taco seasoning mix, chili powder, oregano, and cumin. Bring to a boiling. Reduce heat; simmer occasionally. Mash beans slightly. Spoon mixture into taco shells. Top with cheese.
