1 | md | Onion, minced |
1 | pk | (1.25-oz.) taco seasoning mix |
1 | c | Rosarita traditional salsa mild |
1/2 | c | Water |
1 | cn | (16-oz.) rosarita no fat traditiona |
2 | c | Crushed, unsalted tortilla chips |
2 | c | Grated cheddar and monterey jack ch |
1 | | Lettuce (optional) |
1 | | Tomatoes (optional) |
1 | | Lite sour cream (optional) |
1 | | Chopped olives (optional) |
In a large skillet brown hamburger and onions; drain. Add taco mix, salsa
and water; mix well. Simmer for 10 minutes, add refried beans and set
aside. In an ungreased 12- x 9- x 2-inch baking dish place a layer of 1/2
the tortilla chips, 1/2 meat and bean mixture, and 1/2 the mixed cheeses;
repeat layers with remaining ingredients. Bake, covered, at 350 degrees F.
for 25 minutes. If desired, serve on a bed of lettuce and top with
tomatoes, sour cream and chopped olives. Serve with additional salsa.
