Title: Pumpernickel

1 1/4 | c | Plus 2 T water |
1/4 | c | Sugar |
1 1/3 | c | Whole rye flour |
2/3 | c | Wheat flour |
1/2 | c | Bread flour |
1/2 | c | Gluten flour |
2 | tb | Cocoa |
1 1/2 | ts | Salt |
2 | tb | Oil |
4 | ts | Yeast |
In a sm pot, heat the sugar over mod heat, stirring until it becomes med-dark brown and frothy. Bring 1/4 c water to a boil and add to the sugar, averting your face as you pour; stir well. Set aside to cool.
Add the cooled caramel, and the remainder of the water to the pan. Add the rest of the ingredients.
