3/4 | c | Plus 1 T water |
1 3/4 | c | Wheat flour |
1 1/4 | c | Bread flour |
1 1/2 | ts | Salt |
3 | tb | Oil |
3 | tb | Maple syrup |
2 | lg | Eggs |
4 | ts | Yeast |
1 1/3 | c | Sugar |
1 1/3 | c | Toasted and chopped pecans |
1 1/2 | ts | Cinnamon |
1 | ts | Nutmeg |
3/4 | c | Golden raisins |
1 | ts | Vanilla extract |
Add the water and the syrup, oil, eggs. Carefully add the flours and salt
and the yeast. Set machine on dough mode. Then done, turn onto floured
surface. Cover and let rest for 10 minutes. Lightly oil baking dish. In a
pan, melt 1/2 c sugar and 1/2 c of butter. Bring mixture to a boil and cook
i minute. Remove from heat and stir in vanilla and 1/2 cup of nuts.
Immediately pour mixture into prepared dish. With floured hands, pat dough
into 5/8" thick rectangle. Spread remainder of the butter over surface and
sprinkle with remaining sugar. Top with cinnamon, nutmeg, the remaining
pecans, and the raisins. Beginning at one of the long sides, roll dough up
tightly, pinching the ends to seal. Using a sharp knife, cut into 1"
slices. Arrange slices cut side down, in a prepared dish. Cover loosely
and let set in a warm place to rise for 45 minutes. ake the buns in
pre-heated 350 oven for 40 to 45 minutes or until gholden. Cool 5 minutes,
then invert onto serving plate.
