Title: Ozor Na Szaro (Beef Tongue)

4lbBeef tongue
  Onion
5xPeppercorns
3qtWater
2xBay leaves
SAUCE
3tsSugar, granulated
1tbButter, unsalted
2cBroth from boiling tongue
1tsVinegar
1/2tsLemon rind
1/2cAlmonds, blanched; chopped
3tsWater
1tbFlour, all purpose
2tsLemon juice
1/2cRaisins

Boil tongue with other ingredients until tender, about 2 hours. Cool. Remove outside skin and roots. Slice thin. Save broth. Make Sauce.

Sauce: Carmelize the sugar and water. Add butter,flour and broth and boil to the bubbling stage. Add remaining ingredients. Add sliced tongue and bring to a boil.
