3 | lb | Onions, chopped med. |
2 | lb | Flour, hard |
1 | lb | Shortening (optional) |
19 | lb | Tomatoes, canned, chopped |
1 | oz | Nutmeg (or Mace) |
1/2 | ga | Water |
| | Salt and pepper to taste |
Brown off the beef and onions in a medium copper. Incorporate flour to make
a roux. Cook, stirring with paddle for 7 minutes to lose starch taste. Add
shortening only if needed. Add remaining ingredients. Adjust consistency
