8 | | Dried tomato halves |
1/4 | oz | Flat anchovy fillets |
2 | cc | 2 |
2 | tb | Lemon juice |
4 | ts | Olive oil |
1/2 | ts | Low-sodium soy sauce |
1/4 | ts | Fresh ground pepper |
Soak tomatoes in boiling water to cover, 2 minutes. Drain and reserve
water. In a mini processor, combine tomatoes, 2 T reserved soaking liquid,
anchovies and garlic; process until finely chopped. Add lemon juice, oil,
soy sauce and pepper; process until blended. Stir ini 2 more T soaking
liquid. Cover and refrigerate until ready to use. (wrv)
