6 | lg | Garlic cloves |
1 | ts | Salt |
1/4 | c | Olive oil |
3/8 | c | Red wine vinegar |
2 | ts | Fresh thyme, minced |
2 | ts | Chili sauce |
Fresh pepper, to taste |
*Heaping teaspoons.
Mash garlic and salt to a paste with a mortar and pestle. Combine with other ingredients. Let mixture stand a few hours or overnight in the refrigerator to blend flavors. Stir before using.
The editors wrote: "This dressing is excellent on a salad of fresh lettuce, radishes, onions, and drained and rinsed cooked or canned beans."
