Title: Pasta with Fresh Tomato Sauce

3/4 | lb | Fusilli lunghi (long curly |
Pasta) or other pasta | ||
1 | lb | Ripe tomatoes |
1 | tb | Oil drained from sun-dried |
Tomatoes | ||
1 | md | Onion;chopped |
2 | Garlic cloves;chopped fine | |
2 | tb | Finely chopped drained, sun- |
Dried tomatoes | ||
3 | tb | Chopped fresh basil |
Salt and freshly ground | ||
Pepper to taste | ||
1/2 | c | Grated Asiago cheese |
Cook pasta in large amount of boiling salted water until tender; drain. Meanwhile, halve, seed and chop tomatoes; set aside. In large heavy saucepan, heat oil over medium-high heat. Add onion and garlic; saute until onion is tender, about 3 minutes. Stir in sun-dried tomatoes and cook for 1 minute. Add tomatoes, basil and salt and pepper; stir until heated through, about 1 minute. Add tomato sauce to pasta and toss. Sprinkle cheese on top. Source: Vancouver Sun Oct 26/94
