Title: Honeydew Salsa

Yield: 7 Servings
1/2 | c | Red Onion; sut into 1/4"dice |
1/2 | Red bell pepper; seeded, de- - veined and diced | |
1 | tb | Lime peel; finely minced |
1 | md | Jalapeno; seeded, deveined, - and minced |
2 | c | Ripe honeydew; cut into 1/2" - cubes |
2 | tb | Fresh lime juice |
1/2 | c | Chopped cilantro leaves |
Toss together onion, bell pepper, lime peel, jalapeno and honeydew in a nonreactive bowl. Drizzle with lime juice and toss again. Allow to sit for 30 minutes; adjust seasoning. Add cilantro and serve immediately. Makes 6 to 8 servings.
NOTE: Use any kind of fresh fruit for this salsa - pineapple, grapes, peaches, plums, papayas, whatever. Serve it with grilled chicken, seafood or as an appetizer with jicama fingers.
Cilantro seems to lose flavor once it's cut, so wait until just before serving to chop and toss into the salsa.
