3/4lbFresh green beans OR 1 box frozen
1lgGreen pepper, chopped
1/2lHead of cauliflower cut into florets
6 Celery ribs, chopped
1/4cChopped celery leaves
2lgYellow onions, chopped
16ozCan peeled tomatoes
16ozCan V-8 juice
2tsThyme
1pkFrozen okra (optional)
1cWater

Mix all ingredients and simmer for 45 minutes. Keeps for two weeks in the refrigerator.
