Title: Parmesan Pork

Yield: 4 Servings
1 | lb | Pork tenderloin |
2 | tb | Margarine or butter |
8 | oz | Can pizza sauce |
2 1/2 | oz | Jar |
2 | tb | Dry red wine |
1/8 | ts | Pepper |
1/2 | c | Shredded mozzarella cheese |
Grated Parmesan cheese | ||
Sliced mushrooms -- drained |
Cut the pork tenderloin into 4 pieces. Place 1 piece of pork between 2 pieces of clear plastic wrap. Working the the center to the edges, pound with a meat mallet to 1/4-inch thickness. Repeat with remaining pork. In a 12-inch skillet, cook pork slices in margarine over medium-high heat for 4 to 6 minutes or till done, turning once. Transfer pork to a serving platter; reserving drippings in skillet. Keep pork warm. For sauce, stir pizza sauce, mushrooms, wine, and pepper into drippings in skillet. Cook and stir for about 1 minute or till heated through. Spoon sauce over pork. Sprinkle with mozzarella and Parmesan cheeses.
