Title: Panfried Chicken Breasts - Mix & Match

2 | tb | All-purpose flour |
1/4 | ts | Salt |
1/8 | ts | Pepper |
4 | | Chicken breast halves* |
2 | ts | Olive oil |
*skinned & boned Mix flour, salt, and pepper on waxed paper. Coat chicken
with mixture, shaking off any excess. Heat oil in a large nonstick skillet
over medium-high heat. Remove from heat and tilt pan to coat bottom with
oil. Return to medium-high heat, add chicken and cook 6 - 8 minutes,
turning once, until chicken is golden and opaque at center. Remove to
dinner plates or a platter. Prepare a Mix & Match sauce in same skillet,
first removing any fat left in pan. Serves 4. Source: Woman's Day, 8-5-97.
