Title: Honey-Dijon Beef Stir-Fry

Yield: 4 Servings
1 | lb | Beef round tip steaks; cut 1/8 to 1/4 inch thick |
3 | c | (12 oz.) Frozen French fried potatoes |
x | Vegetable cooking spray | |
1 | Red onion; cut lengthwise into thin wedges | |
1 | Red *or* green bell pepper; cut into thin strips | |
1/4 | ts | Salt (optional) |
1/3 | c | Prepared honey-dijon barbecue sauce |
Preparation Time: 30 minutes
1. Prepare potatoes according to package; keep warm.
2. Meanwhile stack beef steaks; cut lengthwise in half and then crosswise into 1-inch wide strips. Spray large nonstick skillet with cooking spray; heat over medium-high heat until hot. Add beef (1/2 at a time) and stir-fry 1 minute or until outside surface is no longer pink. (Do not overcook.) Remove from skillet; season with salt, if desired.
3. In same skillet, add onion and bell pepper; stir-fry over medium heat 5 minutes or until crisp-tender. Return beef to skillet. Add barbecue sauce; heat through. Spoon mixture over potatoes; serve immediately.
