4 | | Links Chorizo (each about 6 inches long) |
| | 4-6 Idaho potatoes |
1 | | Mdm onion, minced |
| | Oil |
4 | | Eggs |
Brown chorizo in a large frying pan. Dice (1/4 or 3/8 inch) potatoes. Put
potatoes and onions in with the chorizo. Add extra oil depending on the
chorizo. Some commercial brands are sort of greasy, so you don't need
extra oil. Cover and cook until potatoes are almost done. Break eggs on top
of the potatoes. Cover and cook until done the way you like them.
