Title: Grapenut Omelet

1/2cGrapenuts
2tbChopped onion
2tbChopped green pepper
2tbChopped parsley
1 1/2cCooked tomatoes
3tbWater
2tbMelted shortening
3 Eggs
4tbGrated cheese
1tbButter or butter substitute
  Salt and pepper
  Combine shortening, onion, green pepper, and parsley. Brown

slightly. Season to taste. Add tomatoes. Simmer 15 minutes. Beat eggs until foamy. Add water. Fold into first mixture. Season to taste. Melt butter in hot frying pan. Pour in omelet mixture. Cook over slow fire until firm. When it is nearly set, sprinkle grapenuts and cheese over top. Continue cooking until firm to the touch. Fold. Serve at once with tomato sauce. 4 servings.
