Title: Hamburger with Blue Cheese Filling (Uncle Ed'

2 | lb | Lean ground beef. |
2 | oz | Blue cheese, aged; finely |
Crumbled | ||
4 | Young green onions | |
2 | tb | Sour cream. |
1/2 | ts | Finely ground black pepper. |
FIXIN' THE FIXIN'S: 1. Combine cheese, which should be finely crumbled; the onion, minced, tops included; pepper and sour cream. Mix well. 3. Divide meat into 8 equal portions, and press into thin patties of equal size. 4. Spread 1 heaping tbsp. of cheese mixture in the center of 4 of the meat patties, leaving 1/2 inch clear around the edges. 5. Place the remaining patties on top of each of the mixture covered patties. 6. Carefully press around the edges to seal them. 7. Grill over very hot charcoal, or close under a very hot broiler until done.
Comments: Serves two to four, depending on the degree of hunger. I can usually eat four, myself. These go well with mushrooms grilled with beer and butter.
