Title: Jackie Olden's Cactus Salad

SALAD | ||
1 | c | Nopalitos;* (cactus leaves, available in glass jars in Mexic |
1/4 | c | Cilantro; chopped |
2 | Whole avacados; peeled and cubed | |
1 | c | Garbanzo beans; drained |
3 | cl | Whole garlic; chopped |
4 | Green onions; chopped | |
1 | sm | Can ripe olives; sliced drained |
1/2 | lb | Monterey Jack cheese; cubed |
Salt and pepper to taste; | ||
DRESSING | ||
1/2 | c | Oil; |
3 | tb | Wine vinegar; |
1 | tb | Dijon mustard; |
ds | Of tabasco >OR<- | |
ds | Other hot sauce; | |
Salt and pepper taste |
Mix all salad ingredients together and chill until serving. Combine dressing ingredients, mix well, and pour over salad.
