Title: Timbale Eggs

Yield: 4 Servings

1tbOlive oil
1 Clove gresh garlic, minced, or 1 tsp bottled minced garlic
1tbFinely minced chives
1smOnion, chopped
1/4tsSalt
  Freshly ground pepper to taste
1tbMinced cilantro
3tbTomato sauce
1/4tsRed pepper
4lgEggs

Preheat oven to 350F. Heat oil in wok or large skillet. Add garlic, chives and onion. Saute 2 minutes. Add salt and pepper, cilantro, tomato sauce and red pepper. Stir until well mixed. Remove from heat. In a separate bowl, beat eggs slightly. Pour sauce in with eggs, and stir until blended. Pour equal portions into individual greased custard cups.
