Title: Timbale Eggs

Yield: 4 Servings
1 | tb | Olive oil |
1 | | Clove gresh garlic, minced, or 1 tsp bottled minced garlic |
1 | tb | Finely minced chives |
1 | sm | Onion, chopped |
1/4 | ts | Salt |
| | Freshly ground pepper to taste |
1 | tb | Minced cilantro |
3 | tb | Tomato sauce |
1/4 | ts | Red pepper |
4 | lg | Eggs |
Preheat oven to 350F. Heat oil in wok or large skillet. Add garlic, chives
and onion. Saute 2 minutes. Add salt and pepper, cilantro, tomato sauce
and red pepper. Stir until well mixed. Remove from heat. In a separate
bowl, beat eggs slightly. Pour sauce in with eggs, and stir until blended.
Pour equal portions into individual greased custard cups. Bake in oven for
