Title: Quebec Cabbage Soup

1 | c | Green cabbage; shredded |
1/4 | c | Onion; finely chopped |
1/4 | c | Carrot; finely chopped |
1 | tb | Shallot or scallion; minced |
1 | cl | Garlic; finely chopped |
4 | c | Chicken broth; low sodium |
1/8 | ts | Salt |
1/8 | ts | Black pepper |
1 | tb | Fresh parsley; chopped |
Spray a med. saucepan with nonstick cooking spray. Add the cabbage, onion, carrot, shallot, and garlic. Cover and cook over med-low heat for about 5 mins., or until the vegetables soften. Add the chicken broth, salt, and pepper. Bring to a simmer and cook, partially covered, for about 20 mins., until the vegetables are very tender. Serve hot, garnished with parsley.
