Title: Glazed Lamb Burgers

1 | lb | Ground lean lamb |
1 | ts | Minced garlic |
1/8 | ts | Liquid smoke |
1/8 | ts | Pepper |
1 | tb | Chopped parsley |
1/2 | c | Apple butter |
2 | tb | Rice vinegar |
1 | ts | Minced fresh or crumbled dried mint leaves |
1 | tb | Minced fresh ginger |
1 | ts | Each grated orange peel and grated lemon peel |
4 | English muffins, split and toasted | |
Thinly sliced green onions, including tops |
In a bowl, mix lamb, garlic, liquid smoke, pepper and parsley. Divide mixture into 4 equal portions and shape each into a 3/4" thick patty.
In a 10 to 12 inch frying pan over medium-high heat, brown patties on both sides, about 8 minutes. Lift meat from pan and discard drippings. To pan, add apple butter, vinegar, mint, ginger, orange peel and lemon peel. Bring to boiling over high heat. Return meat to pan. Reduce heat and simmer, uncovered, until patties are no longer pink in center, about 4 minutes. As meat cooks, turn pieces over 2 or 3 times adn stir sauce occasionally. Set each patty on a muffin half and spoon sauce equally over portions. Sprinkle with green onions and accompany with remaining muffins. Add salt to taste.
