Title: Chilled Herb Tomato Soup with Citrus & Spice

2 | tb | Olive oil |
5 | Cans (14 oz) diced tomatoes in juice | |
1/2 | c | Chopped shallots |
2 | tb | Minced lemongrass |
1 | tb | Minced fresh ginger |
1 | tb | Chopped garlic |
2 | tb | Honey |
2 | c | Chicken stock or canned low salt broth |
1 | c | Dry white wine |
1/2 | c | Fresh lime juice |
1/4 | c | Chopped fresh cilantro |
2 | tb | Chopped fresh mint |
2 | ts | Grated lime peel |
2 | tb | Fresh lemon juice |
2 | tb | Vodka |
1/2 | c | Thinly sliced arugula |
Heat oil in heavy large pot over medium-low heat. Add tomatoes with their juice, shallots, lemongrass, ginger and garlic. Simmer until liquid evaporates, about 12 minuts. Add honey and simmer until mixtures is very thick, stirring frequently, about 8 minuts. Add chicken stock and the next 5 ingredients. Simmer for 30 minutes.
Working in batches, strain soup into large bowl, pressing on solids to release juices. Discard solids. Season soup with salt and pepper. Chill soup for at least 8 hours.
Stir lemon juice and vodka into soup. Garnish with aruguala.
