Title: Crab Melts

Yield: 4 Servings

3cWhite crab meat
1tbWorcestershire sauce
1tsPaprika
  Grated zest and juice of 1 lime
1/4cChopped red seedless grapes
1/3cCooked long-grain and wild rice
1tsPrepared mustard
1 Red bell pepper, seeded and diced
1tbSnipped fresh chives
1/2cFreshly grated cheddar cheese

Mix together the crabmeat and Worcestershire sauce in a bowl. Add the paprika, lime juice, zest and grapes. Stir in the cooked rice, mustard and bell pepper. Add the chives, and spoon into 4 scallop shells. Top with cheese, and cook under a medium-hot broiler for 5 to 7 minutes, or until the cheese has melted. Serve immediately.
