3 | c | White crab meat |
1 | tb | Worcestershire sauce |
1 | ts | Paprika |
| | Grated zest and juice of 1 lime |
1/4 | c | Chopped red seedless grapes |
1/3 | c | Cooked long-grain and wild rice |
1 | ts | Prepared mustard |
1 | | Red bell pepper, seeded and diced |
1 | tb | Snipped fresh chives |
1/2 | c | Freshly grated cheddar cheese |
Mix together the crabmeat and Worcestershire sauce in a bowl. Add the
paprika, lime juice, zest and grapes. Stir in the cooked rice, mustard and
bell pepper. Add the chives, and spoon into 4 scallop shells. Top with
cheese, and cook under a medium-hot broiler for 5 to 7 minutes, or until
the cheese has melted. Serve immediately.
