Title: Zucchini Nut & Raisin Bread

3/4 | c | Zucchini -- grated |
2 | ts | Salt |
2 | ts | Active dry yeast |
3 | c | Bread flour |
1/3 | c | Rolled oats |
3 | tb | Cracked wheat |
3 | tb | Powdered milk |
1/4 | c | Sugar |
1 1/2 | ts | Ground cinnamon |
3/4 | ts | Ground nutmeg |
3 | tb | Oil |
1 | Egg | |
1 | Egg yolk | |
1/2 | c | Water |
3/4 | c | Raisins and/or nuts |
Put grated zucchini in a colander or strainer. Sprinkle with half the salt, let drain for 30 minutes, and squeeze dry. Add all ingredients except the raisins and/or nuts in the order suggested by your manual. Bake on raisin bread cycle. Add raisins and/or nuts at beeper.
