Title: Authentic French Bread

1cWater
1 1/2tsSalt
3cBread flour
2tsYeast
  Cornmeal
2tbMore water for Welbilt/dak
  And zoji machines
2tsMore yeast for panasonic or
  National machines

Place all ingredients in bread pan, select dough setting, and press start. When dough has risen long enough, machine will beep. Turn off bread machine, remove pan, and turn out dough unto a floured countertop or cutting board.

Makes: one 12-inch oblong loaf or 1 large round loaf or two 18 inch then baguettes or 8 french rolls. 1 1/2 lb. loaf

After shaping loaf, place on a cookie sheet that has a light sprinkle of corn meal. With a sharp knife cut diagonal slashes into dough. Brush with some beaten egg, or spray with water. Place in a warm place and let rise for 30 to 45 minutes.

OPTIONAL: Place a pan of hot water on the bottom rack of the oven while baking. This will produce steam, that is necessary for a real authenic crisp crust.

Pre-heat oven to 450 degrees. Bake 10-15 minutes, depending on what size loaf you have made.
