Title: Irwin's 100% Whole Wheat

1 | tb | Olive oil |
3 | tb | Honey |
1/2 | ts | Salt |
3 | c | Whole wheat flour |
1 1/2 | ts | Yeast |
4 1/2 | tb | Gluten |
The gluten is required since the bran and other components of the whole grain tend to break down the gas bubbles produced by the yeast. This recipe should produce a loaf that is about 6 inches tall with a hearty, robust flavor that I have never found in any commercial loaf. This loaf rises to the top of the pan, and over for me. Even though we are not whole wheat fans, we really like this bread...I never baked it on the quick cycle. Maybe if your breadmaker always gives you high loafs, it may make sense to try it on the quick cycle first.
