BATTER
1cFlour
1/2tsSalt
1tbMelted butter
2/3cWater
1 Egg white
MAIN INGREDIENTS
1 Avocado, peeled, halved and pitted
1 Mango, peeled and sliced
8ozOgen melon, peeled and deseeded
6ozProsciutto
  Oil for deep-frying
  Lemon zest, to garnish
LEMON MAYONNAISE
1cReduced-calorie mayonnaise
2tsLemon juice
1 Garlic clove, crushed

To make the batter, sift the flour and salt into a bowl. Make a well in the center, then mix to a smooth batter with the butter and water. Beat the egg white until it peaks, then fold into the batter.

Slice the avocado, mango and melon. Heat the oil to 350�F. Coat the fruit in the batter, then fry for 3 to 4 minutes in the hot oil until golden-brown. Remove with a slotted spoon, and drain on paper towels.

Mix together the ingredients for the lemon mayonnaise, and place in a serving bowl. Arrange the proscuitto and fried fruits on a serving plate. Garnsih with lemon zest, and serve with the mayonnaise.
