2/3 | c | Water |

MAIN INGREDIENTS | ||
1 | Avocado, peeled, halved and pitted | |
1 | Mango, peeled and sliced | |
8 | oz | Ogen melon, peeled and deseeded |
6 | oz | Prosciutto |
Oil for deep-frying | ||
Lemon zest, to garnish | ||
LEMON MAYONNAISE | ||
1 | c | Reduced-calorie mayonnaise |
2 | ts | Lemon juice |
1 | Garlic clove, crushed |
To make the batter, sift the flour and salt into a bowl. Make a well in the center, then mix to a smooth batter with the butter and water. Beat the egg white until it peaks, then fold into the batter.
Slice the avocado, mango and melon. Heat the oil to 350øF. Coat the fruit in the batter, then fry for 3 to 4 minutes in the hot oil until golden-brown. Remove with a slotted spoon, and drain on paper towels.
Mix together the ingredients for the lemon mayonnaise, and place in a serving bowl. Arrange the proscuitto and fried fruits on a serving plate. Garnsih with lemon zest, and serve with the mayonnaise.
