Tried an interesting experiment today. Thought you might want to know about it.
Armed with a number that Debbie Carlson posted (1 cup of all-purpose flour weighs 4.59 ounces) and accurate kitchen scales, I measured out what *I* thought was 3 cups of flour and then weighed it. Three cups should weigh 13.77, or 13 3/4 ounces. My "guesstimated" three cups weighed in at 14.25 ounces, or only 3 1/2% high.
That sounds like it might be "close enough for government work" and it probably would be, for "by hand" bread. However, that turned out to be almost 3 tablespoons too much for the machine.
As you and I both know, even ONE tablespoon too much or too little can make a difference in the ABM doughball.
I'm weighing from now on.
