Title: Banker's Pineapple Cheese Ball

Yield: 3 Cups
2 | 8 oz cream cheese; softened | |
8 1/2 | oz | Crushed pineapple; drained |
1/4 | c | Green pepper; finely chopped |
2 | tb | Onion; chopped |
1 | ts | Salt |
2 | c | Pecans; chopped |
Assorted crackers |
In medium bowl combine the cream cheese, pineapple, green pepper, onion, salt and 1 cup of pecans. Mix well. Refrigerate until firm. Roll the cheese ball in the remaining pecans before serving. Source: Beverly Hillbillies Cookbook by Jim Clark
